There’s a certain festive cheer in the air and as Christmas lurks just round the corner, our Kooky Cook, Marni Xuto, has concocted a delicious recipe that is the perfect dish for the season - warming, indulgent and all round wonderful ⭐️

Sumptuous, appetising and beautifully adorned in a velvety vermilion sauce, this dish is tantalisingly sweet with piquant overtones and spicy notes that will have you licking the platter clean! 🍽🤤

 

 

Sweet & Sour Cod (no added sugar) 🐠

Ingredients for Cod:
120g      Cod loin
1 pinch  Salt and pepper
3 tbsp    Vegetable oil
1 tbsp    Butter
1/4 tsp   Lime juice
 
Ingredients for Mango sweet sauce:
50g        Onion - sliced
12g        Kooky freeze dried mango
2-3g      Red Chilli
100ml    Hot Water
1 clove  Garlic
3 tbsp   Vegetable oil
1 tsp     Fish sauce
1/2 tsp  Oyster sauce
1/4 tsp  Ground turmeric
1/4 tsp  Lime juice
1 pinch Salt
 
Ingredients for Dragon fruit sour sauce:
50g       Onion - sliced
20g       Kooky gently dried dragon fruit
2-3g      Red chilli
75ml     Hot water
1 clove Garlic
3 tbsp   Vegetable oil
1 tsp     Fish sauce
1 tsp     Oyster sauce
1/2 tsp  Tomato puree
1/4 tsp   Lime juice
1 pinch  Salt
 
Method for Sauces:
1. Soak dried mango and dried dragon fruit in hot water until soft.
2. Use 2 small sauce pans. Put the onion, garlic and oil in each pan. Gently fry onions till translucent
3. Add the mango and its water in one sauce pan and the dragon juice and its water in another.
4. Put remaining ingredients (except salt and lime juice) in each pan. Bring to boil and reduce the liquid to 2/3.
5. Add salt and lime juice. Blend each sauce in an electric blender until smooth. (Add a dash of water if required)
 
Method for Cod:
1. Heat the oil in a non-stick frying pan over medium to high heat.
2. Season the cod with salt and pepper.
3. Place the skin side down and cook for 2min. Add a knob of butter and baste the cod until the skin is crisp and golden. (approx 1 more min)
4. Carefully turn cod and cook for further 2min. Add a dash of lime juice.
5. Assemble the sauce and cod on a serving plate.
6. Serve immediately with Thai jasmine rice and veggies of your choice.
